Crêpe Rollups with Fresh Strawberry Chia Jam
This recipe is so delicious, easy and quick! Made from fresh ingredients and in season strawberries. My eldest loved these when she was young (shes now in a super picky stage and only wants cucumber for breakfast). I now make it for my 8 month old, shes the only one these days that appreciates my efforts. Its the easiest summer breakfast, actually you can take it on the go and have it for any meal of the day. So versatile, you can add nut butter for a little extra protein.
Recipe
For the Crêpes
1 cup organic flour, unbleached all purpose
1 1/2 cups milk, grass fed/organic
2 eggs, free range/organic
1 teaspoon extra virgin olive oil
1/4 teaspoon salt
Add all ingredients to a blender and blend till incorporated and smooth. I prefer mixing these in a blender because it makes it easy to pour in the pan and less dishes.
Heat a lightly greased 6 inch crepe pan; remove from heat.
Pour in 2 tbsp of batter; lift and tilt skillet to spread evenly.
Return to heat; sides will come away from the pan when ready to flip.
Lightly brown the other side and place finished crepe on a plate.
Repeat until all the batter is gone and you have a nice stack of crepes.
For the Strawberry Chia Jam
1/2 cup of organic strawberries
1 tbsp of organic chia seeds
I like to use a baby bullet for making this jam because you can make small portions.
Add strawberries to a small blender and blend until smooth.
Add the chia seeds; blend again for 5 secs.
Let sit for a few minutes to thicken.
Spread Strawberry Chia Jam on a crepe and roll. Easy Peasy.
